Potato Salad

Ingredients

  • 2 lbs potatoes, peeled, washed and cut into chunks
  • 6 hard boiled eggs
  • 3/4 cup onion - chopped very fine
  • 2 stalks celery - chopped very fine (optional)
  • 1 pint Helmann's Mayonnaise
  • 1-1 1/2 tsp onion powder
  • salt and pepper to taste

Directions

Peel potatoes and cut into 1-2 inch chunks. Cover with cold water and boil until tender. Cover eggs with cold water as well and once they have reached a rolling boil let them boil for 20 minutes.

Drain and transfer potatoes to a large mixing bowl. Drain eggs as well and rinse with cold water. Peel the eggs and slice into the mixing bowl with the potatoes.

Gently mix all of the ingredients together and refrigerate until ready to serve. You can garnish with paprika, green olives, or a little parsley.

Description

Each family has those recipes that are at every gathering and you wouldn't think of gathering with out it being on the table. This is one of those recipes in our family. Both my side of the family and my husbands uses the same recipe for potato salad. Growing up in the same county in rural upstate New York recipes and the way you do things are pretty similar.

This is one of the best potato salad recipes that you will ever taste. I never liked potato salad until I had this kind, once you try it you will agree that it is pretty tasty. We are coming to the time of year that potato salad is great with just about any meal.
