Apple Pie

Ingredients

  • 8 cups peeled and sliced apples
  • 1 1/2 cups sugar
  • 2 tsp cinnamon
  • 2 tbsp flour
  • 1/4 cup sliced butter
  • 1 tsp nutmeg (optional)
  • Pie crust (recipe below)
    Pie Crust Ingredients:
  • 4 cups flour
  • 1 3/4 cup vegetable shortening
  • 1 tbsp sugar
  • 2 tsp salt
  • 1 tbsp vinegar
  • 1 egg
  • 1/2 cup water

Directions

Peel and slice apples into thin slices. Granny Smith apples are the best for this kind of pie. You want to have enough apples that they are mounded nicely in your pie plate. This will vary depending on the size of your pie plate. Don't skimp on the apples! If you don't have enough apples; when it cooks down it will be flat, so make sure you have enough, more is always better.

Once all of your apples are ready to go put them in a bowl and mix together with the sugar, cinnamon flour and nutmeg. Stir gently until the apples are well coated.

Take one pie crust and place on bottom of pie plate. Make sure there are no air bubbles between the crust and plate. Fill with apples and lay the other crust over top. Pinch together the sides using your fingers or a fork.

Before sticking in the oven brush with some type of milk product; half'n half or milk. This will give it a nice top when baking.

Bake in a 400;° oven for about 1 hour or until bubbly. It may be helpful to place the pie on a cookie sheet covered with foil. The pie will ooze over the sides and that will let you know it is done. Clean up can be quite a chore so the cookie sheet makes clean up a lot easier.

Serve warm with some vanilla ice cream or some cheese (my dad's personal favorite!)


Pie Crust Directions
If you are making a pie crust from scratch, this is a great recipe to follow. I usually buy my pie crusts and I don't notice any difference and save myself half of the time. But if you like the homemade way here you go!

With a fork mix together the first four ingredients. In a separate bowl mix together the remaining ingredients. Combine the two bowls and mix until everything is well moistened. Mold into a ball.

Chill 15 minutes before rolling out. This will keep in the refrigerator for one week.

Makes enough for 4 one crust pies and 2 two crust pies.

My mom makes the very best apple pie. Not only does she make the very best but she always makes them in large quantities and freezes them for future use. So if you like homemade pie without the work make a bunch at a time and freeze them. Use a foil pie dish and wrap tightly in plastic wrap first and then in some foil. When you are ready to use them pull it out of the freezer, and without defrosting it stick it in the oven to bake. Great for last minute guests who happen to drop by or for a night when you want a home baked pie with none of the work!
