Honey Moist Cornbread
Ingredients
- 1 cup flour
- 1 cup yellow cornmeal
- 1/4 cup sugar
- 1 tsp baking soda
- 1 cup milk or heavy whipping cream
- 1/4 cup vegtable oil
- 1/4 cup honey
- 2 eggs slightly beaten
Directions
Heat oven to 400°
In a medium bowl mix together the dry ingredients. Flour, cornmeal, sugar & baking powder.
Stir in remaining ingredients and stir until just moistened. A trick to get the honey out of the measuring cup, measure the oil first then the honey.
Pour into greased 9x9 square baking pan.
Bake 20-25 minutes or until toothpick comes out clean.
Description
This is one of the first recipes that I learned how to make when I was young. My family always loved cornbread or Johnny cake as my grandmother calls it. My mom always used the same recipe and it was so tasty. The honey in the cornbread makes it very moist and also sweetens it just enough that it tastes great even without the butter.
It also makes a great breakfast when toasted with butter, definitely one of my favorites!
