Mexican Lasagna

Ingredients

  • 36 corn tortillas
  • 2 lbs ground beef (browned)
  • 2 cans black beans (rinsed)
  • 2 jars salsa (16 oz jar)
  • 2 cups sour cream
  • 2 large green peppers (chopped)
  • 1 can sliced ripe olives
  • 2 cups shredded cheddar
  • 2 cups Monterey Jack cheese

Directions

This recipe will make two casserole dishes worth of lasagna. I cut the recipe in half and only made one small one.

Preheat oven to 350°

Layer corn tortillas on the bottom of pan.

Layer sour cream, salsa, black beans, peppers, olives, ground beef, and cheese. Cover with another layer of corn tortillas and repeat layer. Sprinkle top with cheese.

Bake covered in oven until bubbly, about 15 minutes. Bake uncovered the last 3-5 minutes or until the cheese melts on the top.

Let rest 10 minutes before serving.

If you love Mexican food this is a tasty recipe to add to your recipe box. My husband and I love Mexican, but often times it is very greasy and takes so long to prepare. This recipe is not greasy like restaurants seem to be, but just as tasty and easy too.

I found this recipe in a Taste of Home book and changed a few ingredients to give it a little more Mexican flare. This is one of those that you don't have to stick to these ingredients to end up with a tasty meal. Experiment with the ingredients. As I was making it I thought some corn would be good, and chicken instead of beef might work too!
